#25 - Climate Change Didn’t Start in 1850

📉 By extending global temperature records back to the 1700s, scientists are uncovering a quieter, earlier phase of human-driven warming that never made it into the official scorecard.

Cold seasons have always been about preservation, patience, and making the most of what’s available - and this dish fits that tradition perfectly.

🥕 Root vegetables, mushrooms, and aubergine are naturally low-impact crops, especially when grown locally and in season. They store well, require less energy-intensive transport, and deliver deep flavor without relying on animal products. 🌍 Lower your washing machine temperature to 30°C for everyday laundry. Modern detergents are designed to work at lower temperatures, and this single shift can cut washing-related energy use by up to 40% - without sacrificing cleanliness.
